Basic Healthy Vegan Coffee Cake

  • 1 Cup unsweetened almond milk
  • 1 tsp apple cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup olive oil
  • Vanilla extract (I don’t measure)
  • 1 1/4 cup flour (I used whole wheat and soy)
  • 2 tsp baking powder
  • 1/2 tsp salt

Additives:

  • Cinnamon, cardamom, ginger, nutmeg, cloves, or any other spice
  • Almond extract (or any other extract)
  • Nuts
  • Vegan chocolate chips

375 degrees Fahrenheit 35-40 min in a greased square pan

– Mix almond milk and vinegar and set aside for a while

– Mix the rest of the ingredients in a bowl

– Add vinegar mixture

– Pour into greased pan and bake for 35-40 min

Calories: 135   Fat: 6.6 g   Carbs: 20.5 g   Sugars: 8.1 g   Protein: 2.3 g

*I made mine with cinnamon and almond extract 

*If you want a sweet, moister cake you could probably increase the olive oil and sugar content to 1/3 cup
