Quinoa-Chicken Burrito bowl
- 3 oz chicken breast
- 1/4 cup dry quinoa
- Roma Tomato
- 1/4 small avocado
- 1/4 cup diced onions
- 1/2 cup shredded green cabbage
- 1/4 cup refried pinto beans
- Mango Salsa
- Cayenne, black pepper, paprika, and salt
If vegan/vegetarian: swap the chicken for tofu or tempeh or black beans (if vegetarian you could even add cheese to add more protein)
Also, green pepper hot sauce or sriracha is amazing on this… if you like it hot!
