So I’m gonna be doing 2 different recipes today, so the photo at the very bottom is just a compilation of the two!
I’ll be doing the recipe for the watermelon salad in this one 🙂
So OBVIOUSLY summertime and watermelons go hand in hand. I don’t think it’s even legal to have one without the other!
This salad is such an awesome, refreshing, and light salad to have on the side, OR you can add in some feta cheese and make it a super nice and fresh lunch!
Ingredients (serves one):
– 1.5 cups of watermelon chopped into bite sized pieces
– 1 tablespoon of red wine vinegar
– 1.5 tablespoons of olive oil
– salt & pepper
– 2 shallots, finely chopped
– 2-3 cups of designer greens (peppery kinds would be best)
So first off, finely chop your shallots and allow that to sit in the vinegar and oil mixture along with salt & pepper while you cut up the watermelons and stuff. This helps it lose the pungency and adopt this GREAT sweetness.
Once everything is chopped up and ready, just toss your salad and serve!
I served this along with a chicken breast on top of my chickpea puree, which I’ll be posting about next!
